Made from turanicum wheat (triticum turgidum subspecie turanicum, more commonly known as T. Turanicum) from certified organic agriculture. This type of wheat grows in the Khorasan region (northeastern Iran) and also in Italy, but nowadays it has been forgotten. 

 

Mancini Pasta

Grown on 10 hectares in Le Marche, central Italy, Mancini pasta is produced from durum wheat cultivated directly by the company who built their factory right in the middle of one of their fields.  Semolina and water are the only ingredients. They use circular bronze die plates and dry the pasta at temperatures lower than 44°C
